I love salad jars! You can prep up to a week's worth at a time and they stay fresh!
I started out with 4 pint jars, I like wide mouth. They are easier to stuff and dump out. For my veggies, I like tomatoes, cucumber, bell peppers, and super greens.
For 4 jars worth, I used:
1 medium cucumber
2 roma tomatoes
2 medium bell peppers
5 oz container of super greens
Peel and slice cucumber, divide between jars. Slice tomatoes, divide between jars. Slice peppers, divide between the jars (see a pattern). You can use any veggies! You just want the wettest veggies on the bottom and lay up to the driest.

So, can you tell I like goodies more than salad greens? This ratio is totally up to you. Then I divided up my greens and mashed them in each jar.
Put the lids on and place in the fridge. 4 days worth of salads ready to add your protein to!
I keep small bottles of olive oil and balsamic vinegar at work to use as dressing. Just dump onto a plate, add your protein, and add 1/2 tablespoon olive oil and unlimited balsamic.
