In preparation for the holidays, I have started a 5 day clean eating challenge. I have 33 awesome participants! Thanks, everyone for joining me in this! I need the accountability. The menu, recipes, and shopping list are posted above, in two different formats.
Our challenge officially starts on Monday. Since the Seahawks are playing tomorrow, I have decided to do all my prep for the week today.
I started out with my steel-cut oats.
1 cup steel cut oats
3 cups water
Place ingredients in medium sauce pan. Turn to high. Bring to simmer, then lower heat to medium and put a lid on it.

Place ingredients in medium sauce pan. Turn to high. Bring to simmer, then lower heat to medium and put a lid on it.
Set a timer to 3 minutes. After 3 minutes, turn off heat, and divide the oats and water between 3 jars or other containers. put lids on, label them in some manner so you can keep track of them throughout the week, and place in fridge.
After they have been in the fridge for a couple hours, open each jar, and add your berries. Monday, Tuesday, and Thursday morning of the challenge, just grab a jar, take the lid off, and pop in the microwave for 1 1/2 to 2 minutes. Add a splash of water or almond milk if the oats are too thick for your liking. You can also add some cinnamon or nutmeg for a little more flavor.
